A new Waffle House restaurant was cited for a high-priority violation in an inspection earlier this month.

An inspector visited the Waffle House, which opened earlier this year near BJ’s Wholesale in Lady Lake, on Sept. 8 and watched as an employee cracked a raw egg shell and then used her hand to pick up a clean plate, without first washing her hands, according to an inspection report on file with the Florida Department of Business and Professional Regulation.

The inspector also found that a reach-in cooler had an accumulation of soil residue and there was no probe thermometer to measure food temperatures.

In addition, there were paperwork problems, including no proof of required state-approved training for any employees.
