Bagels need to have an authentic New York ingredient

Re: Article about new New York-style bagels.
No matter what recipe the bagel shop new owner uses if he does not use the correct ingredients (New York water if you’re from New York, you know what I mean) it will taste just like any commercial bagel you can purchase in a bag at any grocery store
